Classic Shrimp Scampi

Colossal shrimp seared hard, then coated in a buttery garlic-white wine sauce with lemon and a hit of hot sauce.

Ingredients

  • 16 colossal shrimp, peeled and deveined

Kosher salt

  • 2 tablespoons canola oil
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, grated
  • 1/2 cup dry white wine
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon Worcestershire sauce

Few dashes Tabasco

  • 1 lemon, zested and juiced
  • 1/4 cup chopped fresh parsley

Directions

  1. Pat the shrimp dry and season both sides with salt.
  2. Heat the oil in a large skillet over very high heat. Sear the shrimp until browned on both sides and just opaque, about 1 to 2 minutes per side. Transfer to a plate.
  3. Lower the heat to medium. Add the butter and grated garlic and cook until fragrant, about 1 minute.
  4. Pour in the white wine and simmer to reduce slightly, then add the red pepper flakes, Worcestershire, Tabasco, lemon zest, and lemon juice.
  5. Return the shrimp and any juices to the pan and toss off the heat to coat in the sauce.
  6. Finish with the parsley and serve immediately with bread or pasta.
