Classic Shrimp Scampi
Colossal shrimp seared hard, then coated in a buttery garlic-white wine sauce with lemon and a hit of hot sauce.
Colossal shrimp seared hard, then coated in a buttery garlic-white wine sauce with lemon and a hit of hot sauce.
Ingredients
- 16 colossal shrimp, peeled and deveined
Kosher salt
- 2 tablespoons canola oil
- 6 tablespoons unsalted butter
- 4 cloves garlic, grated
- 1/2 cup dry white wine
- 1/2 teaspoon red pepper flakes
- 1 teaspoon Worcestershire sauce
Few dashes Tabasco
- 1 lemon, zested and juiced
- 1/4 cup chopped fresh parsley
Directions
- Pat the shrimp dry and season both sides with salt.
- Heat the oil in a large skillet over very high heat. Sear the shrimp until browned on both sides and just opaque, about 1 to 2 minutes per side. Transfer to a plate.
- Lower the heat to medium. Add the butter and grated garlic and cook until fragrant, about 1 minute.
- Pour in the white wine and simmer to reduce slightly, then add the red pepper flakes, Worcestershire, Tabasco, lemon zest, and lemon juice.
- Return the shrimp and any juices to the pan and toss off the heat to coat in the sauce.
- Finish with the parsley and serve immediately with bread or pasta.
