Eggs on an Island

Ingredients

  • 4 eggs (separated)
  • 1 C shredded sharp cheddar cheese
  • 4 pieces of bread, toasted
  • 1 tsp paprika (I like smoked Spanish paprika)
  • salt and pepper to taste

Directions

Preheat oven to 325.

  1. 1 – Toast and butter (on one side only) the 4 pieces of bread and place them (butter side up) on an ungreased cookie sheet.
  2. 2 – Separate eggs.
  3. 3 – Whip egg whites to a stiff peak and then fold in 1/2 cup shredded cheese.
  4. 4 – Mound the egg white mixture on to each of the pieces of toast like a big cloud (island).
  5. 5 – carefully place one yolk in the center of each island.I usually make a small indentation in the island with the back of a spoon before I put the yolk in.
  6. 6 – sprinkle the paprika and remaining cheese over the tops of the eggs on an island. Lightly salt and pepper and put into oven for about 10-15 minutes until egg whites just start to turn brown (this happens quickly so be careful).
  7. Sometimes I like to substitute parmaesan cheese for the topping.

Notes

This may go by other names, but as of yet, I have not met anyone else who has ever had these. Growing up on the west coast of Michigan, Eggs on an Island were one of my Father’s favorite breakfast foods but we had them for dinner occasionally as well. I believe that his grandmother (Grandma Hay) made these for him.
