Emeril’s all-purpose ‘Essence’ spice blend, the BAM-worthy backbone of his Creole and Cajun cooking.

Ingredients

  • 2 1/2 tablespoons sweet paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme

Directions

  1. Combine all of the ingredients thoroughly in a small bowl.
  2. Transfer to an airtight jar or container and store away from heat and light.
  3. Use to season meats, seafood, vegetables, eggs, and just about anything that needs a kick of Creole flavor.
