Crisp cornmeal-crusted slices of tart green tomatoes fried golden brown.

Ingredients

  • 3 firm green tomatoes, sliced 1/4-inch thick
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 large egg
  • 1 cup cornmeal
  • 1/2 cup plain breadcrumbs
  • Vegetable oil, for frying

Directions

  1. Season the tomato slices with the salt and pepper.
  2. Set up three dishes: flour in one; buttermilk whisked with the egg in another; cornmeal mixed with breadcrumbs in the third.
  3. Dredge each slice in flour, dip in the buttermilk-egg, then coat in the cornmeal mixture.
  4. Heat about 1/2 inch of oil in a skillet to 350 degrees F.
  5. Fry the slices in batches until golden brown, about 2 minutes per side.
  6. Drain on a wire rack and serve hot.
