Fried Green Tomatoes

Crisp cornmeal-crusted slices of tart green tomatoes fried golden brown.
Ingredients
- 3 firm green tomatoes, sliced 1/4-inch thick
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- 1 cup buttermilk
- 1 large egg
- 1 cup cornmeal
- 1/2 cup plain breadcrumbs
- Vegetable oil, for frying
Directions
- Season the tomato slices with the salt and pepper.
- Set up three dishes: flour in one; buttermilk whisked with the egg in another; cornmeal mixed with breadcrumbs in the third.
- Dredge each slice in flour, dip in the buttermilk-egg, then coat in the cornmeal mixture.
- Heat about 1/2 inch of oil in a skillet to 350 degrees F.
- Fry the slices in batches until golden brown, about 2 minutes per side.
- Drain on a wire rack and serve hot.
