Fried Grits Cakes

Crispy on the outside, creamy within - the best way to use up leftover grits. Cut into rounds or squares, bread, and pan-fry.

Fried Grits Cakes

Crispy on the outside, creamy within - the best way to use up leftover grits. Cut into rounds or squares, bread, and pan-fry.

Ingredients

  • 4 cups cooked grits (cheese grits work great), warm
  • 2 eggs, beaten
  • 1 cup all-purpose flour, seasoned with salt and pepper
  • 1 cup fine breadcrumbs or panko
  • Vegetable oil for frying

Directions

  1. Spread the warm grits about 3/4-inch thick on a greased sheet pan. Cover and refrigerate at least 1 hour until firm and fully set.
  2. Cut the set grits into squares, rectangles, or rounds.
  3. Dredge each piece in seasoned flour, then egg, then breadcrumbs.
  4. Heat about 1/4 inch of oil in a heavy skillet over medium-high. Fry the cakes 3 to 4 minutes per side until deep golden.
  5. Drain on paper towels and serve hot - plain, with hot sauce, or under a fried egg.

Notes

Add crumbled bacon, diced jalapeno, or extra cheese to the grits before chilling for loaded cakes.
