Crispy on the outside, creamy within - the best way to use up leftover grits. Cut into rounds or squares, bread, and pan-fry.
Ingredients
- 4 cups cooked grits (cheese grits work great), warm
- 2 eggs, beaten
- 1 cup all-purpose flour, seasoned with salt and pepper
- 1 cup fine breadcrumbs or panko
- Vegetable oil for frying
Directions
- Spread the warm grits about 3/4-inch thick on a greased sheet pan. Cover and refrigerate at least 1 hour until firm and fully set.
- Cut the set grits into squares, rectangles, or rounds.
- Dredge each piece in seasoned flour, then egg, then breadcrumbs.
- Heat about 1/4 inch of oil in a heavy skillet over medium-high. Fry the cakes 3 to 4 minutes per side until deep golden.
- Drain on paper towels and serve hot - plain, with hot sauce, or under a fried egg.
Notes
Add crumbled bacon, diced jalapeno, or extra cheese to the grits before chilling for loaded cakes.
