Cheesy grits with a fresh jalapeno kick - a little heat that cuts the richness.
Ingredients
- 1 cup grits
- 2 cups water
- 2 cups milk
- 1 teaspoon salt
- 1 to 2 fresh jalapenos, seeded and minced
- 3 tablespoons butter
- 1 1/2 cups shredded pepper Jack or sharp cheddar
- Black pepper
Directions
- Bring the water, milk, and salt to a boil; whisk in the grits.
- Reduce heat and simmer 5 to 7 minutes (quick) or longer for stone-ground, stirring, until thick.
- Stir in the minced jalapeno, butter, and cheese until melted.
- Season with black pepper and serve.
Notes
Leave some seeds in for more heat. Great under fried eggs or barbecue.
