Cheesy grits with a fresh jalapeno kick - a little heat that cuts the richness.

Ingredients

  • 1 cup grits
  • 2 cups water
  • 2 cups milk
  • 1 teaspoon salt
  • 1 to 2 fresh jalapenos, seeded and minced
  • 3 tablespoons butter
  • 1 1/2 cups shredded pepper Jack or sharp cheddar
  • Black pepper

Directions

  1. Bring the water, milk, and salt to a boil; whisk in the grits.
  2. Reduce heat and simmer 5 to 7 minutes (quick) or longer for stone-ground, stirring, until thick.
  3. Stir in the minced jalapeno, butter, and cheese until melted.
  4. Season with black pepper and serve.

Notes

Leave some seeds in for more heat. Great under fried eggs or barbecue.
