Jalapeno Cheese Grits with Jammy Eggs and Bacon

A loaded breakfast bowl: spicy jalapeno cheese grits topped with jammy soft-boiled eggs and crisp bacon.
Ingredients
- 4 cups Jalapeno Cheddar Grits
- 4 eggs
- 6 slices bacon
- Sliced scallions
- Extra pickled or fresh jalapeno
- Hot sauce
Directions
- Soft-boil the eggs: simmer 6 1/2 minutes, then chill in ice water and peel. The yolks should be jammy.
Cook the bacon until crisp; drain and crumble.
- Spoon the jalapeno cheese grits into bowls. Halve the eggs and set on top with the bacon, scallions, and extra jalapeno.
- Finish with hot sauce.
