James Beard's Favorite Hamburger

Beard’s deceptively simple burger, enriched with grated onion and a splash of heavy cream for an exceptionally juicy patty.

Ingredients

  • 1 1/2 pounds ground beef chuck (about 20% fat)
  • 1 small onion, finely grated (about 3 tablespoons)
  • 3 tablespoons heavy cream
  • 1 1/2 teaspoons kosher salt
  • 3/4 teaspoon freshly ground black pepper
  • 1 tablespoon butter or beef fat, for the pan
  • 4 hamburger buns or thick slices of toasted French bread
  • Condiments of choice, for serving

Directions

  1. In a bowl, gently combine the ground beef with the grated onion, heavy cream, salt, and pepper, mixing just until blended; do not overwork.
  2. Divide into 4 portions and shape into patties about 3/4 inch thick, pressing a slight dimple into the center of each.
  3. Heat a heavy skillet or griddle over medium-high heat and add the butter.
  4. Cook the patties about 3 to 4 minutes per side for medium-rare to medium, turning once.
  5. Let rest 2 minutes, then serve on toasted buns with your favorite condiments.
