Ingredients
- 1 1/2 pounds ground beef chuck (about 20% fat)
- 1 small onion, finely grated (about 3 tablespoons)
- 3 tablespoons heavy cream
- 1 1/2 teaspoons kosher salt
- 3/4 teaspoon freshly ground black pepper
- 1 tablespoon butter or beef fat, for the pan
- 4 hamburger buns or thick slices of toasted French bread
- Condiments of choice, for serving
Directions
- In a bowl, gently combine the ground beef with the grated onion, heavy cream, salt, and pepper, mixing just until blended; do not overwork.
- Divide into 4 portions and shape into patties about 3/4 inch thick, pressing a slight dimple into the center of each.
- Heat a heavy skillet or griddle over medium-high heat and add the butter.
- Cook the patties about 3 to 4 minutes per side for medium-rare to medium, turning once.
- Let rest 2 minutes, then serve on toasted buns with your favorite condiments.
