Justin Wilson's Peach Cobbler

A bubbling Southern peach cobbler with a buttery self-forming cake crust.

Ingredients

  • 8 cups sliced fresh peaches (or two 29 oz cans, drained)
  • 1 1/2 cups sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 stick (1/2 cup) butter
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract

Directions

  1. Toss the peaches with 1/2 cup of the sugar, the lemon juice, and cinnamon and let sit while the oven heats to 350 degrees F.
  2. Put the butter in a 9x13-inch baking dish and place it in the oven to melt.
  3. In a bowl, whisk together the flour, the remaining 1 cup sugar, baking powder, and salt, then stir in the milk and vanilla to make a batter.
  4. Pour the batter over the melted butter; do not stir.
  5. Spoon the peaches and their juice evenly over the batter; again do not stir. The batter will rise up around the fruit as it bakes.
  6. Bake 45 minutes, until the crust is golden brown and bubbling. Serve warm with vanilla ice cream.
