A bubbling Southern peach cobbler with a buttery self-forming cake crust.
Ingredients
- 8 cups sliced fresh peaches (or two 29 oz cans, drained)
- 1 1/2 cups sugar, divided
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1 stick (1/2 cup) butter
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
Directions
- Toss the peaches with 1/2 cup of the sugar, the lemon juice, and cinnamon and let sit while the oven heats to 350 degrees F.
- Put the butter in a 9x13-inch baking dish and place it in the oven to melt.
- In a bowl, whisk together the flour, the remaining 1 cup sugar, baking powder, and salt, then stir in the milk and vanilla to make a batter.
- Pour the batter over the melted butter; do not stir.
- Spoon the peaches and their juice evenly over the batter; again do not stir. The batter will rise up around the fruit as it bakes.
- Bake 45 minutes, until the crust is golden brown and bubbling. Serve warm with vanilla ice cream.
