Justin Wilson's Pecan Pralines

Creamy brown-sugar candy loaded with toasted pecans, dropped into patties to set up firm.
Ingredients
- 1 1/2 cups granulated sugar
- 1 1/2 cups packed light brown sugar
- 1 cup evaporated milk
- 4 tablespoons butter
- 1 teaspoon vanilla extract
- 2 cups pecan halves
- Pinch of salt
Directions
- Line two baking sheets with parchment or wax paper and butter the paper.
- In a heavy saucepan, combine the granulated sugar, brown sugar, evaporated milk, butter, and salt over medium heat.
- Stirring constantly, bring to a boil and cook until the mixture reaches the soft-ball stage, 236 degrees F on a candy thermometer.
- Remove from heat and stir in the vanilla and pecans.
- Beat with a spoon for 1 to 2 minutes, until the mixture thickens and just begins to lose its gloss.
- Working quickly, drop tablespoonfuls onto the prepared paper and let cool until firm and set.
