Justin Wilson's Pecan Pralines

Creamy brown-sugar candy loaded with toasted pecans, dropped into patties to set up firm.

Ingredients

  • 1 1/2 cups granulated sugar
  • 1 1/2 cups packed light brown sugar
  • 1 cup evaporated milk
  • 4 tablespoons butter
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves
  • Pinch of salt

Directions

  1. Line two baking sheets with parchment or wax paper and butter the paper.
  2. In a heavy saucepan, combine the granulated sugar, brown sugar, evaporated milk, butter, and salt over medium heat.
  3. Stirring constantly, bring to a boil and cook until the mixture reaches the soft-ball stage, 236 degrees F on a candy thermometer.
  4. Remove from heat and stir in the vanilla and pecans.
  5. Beat with a spoon for 1 to 2 minutes, until the mixture thickens and just begins to lose its gloss.
  6. Working quickly, drop tablespoonfuls onto the prepared paper and let cool until firm and set.
