Ingredients

Lettuce or mixed greens — 20 pounds

  • French or other dressing — 2 quarts (2 No. 56 dippers)

Directions

  1. Chill lettuce or mixed greens until crisp; dry and cut into 1½-inch pieces.
  2. Serve with French or other dressing (recipes Nos. 459 to 484).
