Light Vietnamese Pork Stock (Nuoc Dung Heo)
Ingredients
- 1 pound meaty but lean pork bones
- 5 white peppercorns
- 9 cups cold water
Directions
- Bring the cold water, bones, and peppercorns to a slow boil, then reduce heat and simmer on low, skimming, for 45 minutes. Strain and skim off any fat.
