Marmite Spaghetti
A wickedly savoury, ten-minute store-cupboard supper of spaghetti tossed with butter, Marmite and a snowfall of Parmesan.

A wickedly savoury, ten-minute store-cupboard supper of spaghetti tossed with butter, Marmite and a snowfall of Parmesan.
Ingredients
- 250g spaghetti
- 50g unsalted butter
- 1 heaped teaspoon Marmite (or to taste)
- Splash of starchy pasta cooking water
- Grated Parmesan, to serve
Directions
- Cook the spaghetti in well-salted boiling water until al dente, reserving a cupful of the cooking water before draining.
- Meanwhile, melt the butter in a wide pan over low heat and stir in the Marmite until smooth and glossy.
- Add a couple of tablespoons of the pasta water to loosen the sauce into an emulsion.
- Tip in the drained spaghetti and toss thoroughly so every strand is coated, adding more pasta water as needed.
- Serve at once with plenty of grated Parmesan over the top.
