Marmite Spaghetti

A wickedly savoury, ten-minute store-cupboard supper of spaghetti tossed with butter, Marmite and a snowfall of Parmesan.

Ingredients

  • 250g spaghetti
  • 50g unsalted butter
  • 1 heaped teaspoon Marmite (or to taste)
  • Splash of starchy pasta cooking water
  • Grated Parmesan, to serve

Directions

  1. Cook the spaghetti in well-salted boiling water until al dente, reserving a cupful of the cooking water before draining.
  2. Meanwhile, melt the butter in a wide pan over low heat and stir in the Marmite until smooth and glossy.
  3. Add a couple of tablespoons of the pasta water to loosen the sauce into an emulsion.
  4. Tip in the drained spaghetti and toss thoroughly so every strand is coated, adding more pasta water as needed.
  5. Serve at once with plenty of grated Parmesan over the top.
