Mashed Sweet Potatoes with Molasses and Orange

Oven-baked sweet potatoes mashed with molasses, orange, and cinnamon for deep flavor without any cream or milk.

Ingredients

  • 4 large sweet potatoes
  • 4 tablespoons unsalted butter
  • 2 tablespoons molasses
  • 1 orange, zested and juiced
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon kosher salt

Directions

  1. Preheat the oven to 400 degrees F. Prick the sweet potatoes and bake directly on the rack until very tender, about 1 1/2 hours.
  2. When cool enough to handle, split them open and scoop the flesh into a bowl.
  3. Add the butter, molasses, orange zest and juice, cinnamon, and salt.
  4. Mash until smooth, adjusting salt to taste.
  5. Reheat gently if needed and serve warm.
