Mashed Sweet Potatoes with Molasses and Orange

Ingredients
- 4 large sweet potatoes
- 4 tablespoons unsalted butter
- 2 tablespoons molasses
- 1 orange, zested and juiced
- 1/2 teaspoon ground cinnamon
- 1 teaspoon kosher salt
Directions
- Preheat the oven to 400 degrees F. Prick the sweet potatoes and bake directly on the rack until very tender, about 1 1/2 hours.
- When cool enough to handle, split them open and scoop the flesh into a bowl.
- Add the butter, molasses, orange zest and juice, cinnamon, and salt.
- Mash until smooth, adjusting salt to taste.
- Reheat gently if needed and serve warm.
