Mock Maple Sirup

Ingredients

  • Sugar, brown — 6 pounds (4½ No. 56 dippers)
  • Water, boiling — 2½ quarts (2½ No. 56 dippers)
  • Vanilla — as needed

Directions

  1. Add sugar to boiling water; stir until sugar is dissolved.
  2. Heat to boiling point; boil 10 minutes or until a thin sirup is formed, without stirring. Remove from heat.
  3. Add vanilla; cool.

SCALED TO 8 SERVINGS (the original is ÷12.5): Sugar, brown — 7⅔ oz Water, boiling — 12¾ tbsp Vanilla — to taste
