A heritage Tennessee mill recipe: grits simmered in salted milk and water, enriched with eggs, garlic, and sharp cheese, then baked until set.
Ingredients
- 1 cup grits
- 2 cups water
- 2 cups milk
- 1 teaspoon salt
- 3 cloves garlic, minced
- 4 tablespoons butter
- 2 cups shredded sharp cheddar, divided
- 2 eggs, beaten
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon cayenne
Directions
- Heat the oven to 350 F and butter a casserole dish.
- Bring the water, milk, and salt to a boil, whisk in the grits and garlic, and simmer 20 to 25 minutes, stirring, until thick.
- Stir in the butter, 1 1/2 cups cheddar, the Worcestershire, and cayenne, then temper in the beaten eggs.
- Pour into the dish, top with the remaining cheese, and bake 40 to 45 minutes until nearly set and lightly browned.
