Old-Fashioned Meatloaf

A moist, classic meatloaf with a sweet-tangy tomato glaze.
Ingredients
- 1 1/2 lbs ground beef
- 1 cup grated cheddar cheese (optional)
- 1 large egg, lightly beaten
- 1 onion, chopped
- 1/2 cup diced green bell pepper
- 1 can (8 oz) diced tomatoes, drained (or 1/2 cup), plus extra
- 1/2 cup quick oats or breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon mustard
Directions
Preheat the oven to 375 degrees F.
- In a large bowl, combine the ground beef, cheese, egg, onion, bell pepper, tomatoes, oats, salt, and pepper.
- Press the mixture into a loaf pan or shape into a loaf on a lined baking sheet.
- Stir together the ketchup, brown sugar, and mustard, then spread over the top of the loaf.
- Bake for about 1 hour, until cooked through (internal temperature 160 degrees F).
- Let rest 10 minutes before slicing.
