A moist, classic meatloaf with a sweet-tangy tomato glaze.

Ingredients

  • 1 1/2 lbs ground beef
  • 1 cup grated cheddar cheese (optional)
  • 1 large egg, lightly beaten
  • 1 onion, chopped
  • 1/2 cup diced green bell pepper
  • 1 can (8 oz) diced tomatoes, drained (or 1/2 cup), plus extra
  • 1/2 cup quick oats or breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard

Directions

Preheat the oven to 375 degrees F.

  1. In a large bowl, combine the ground beef, cheese, egg, onion, bell pepper, tomatoes, oats, salt, and pepper.
  2. Press the mixture into a loaf pan or shape into a loaf on a lined baking sheet.
  3. Stir together the ketchup, brown sugar, and mustard, then spread over the top of the loaf.
  4. Bake for about 1 hour, until cooked through (internal temperature 160 degrees F).
  5. Let rest 10 minutes before slicing.
