Paula Deen’s basic grits - a Southern staple cooked in milk and water and finished with plenty of butter.

Ingredients

  • 2 cups water
  • 1 1/4 cups milk
  • 1 teaspoon salt
  • 1 cup quick-cooking grits (not instant)
  • 1/2 cup butter

Directions

  1. Bring the water, milk, and salt to a boil in a small pot.
  2. Slowly stir in the grits, stirring continuously and thoroughly until well mixed.
  3. Return to a boil, then cover, reduce the heat, and cook about 30 minutes, stirring occasionally and adding water if needed.
  4. The grits are done when they have the consistency of smooth cream of wheat. Stir in the butter and serve.
