The South’s beloved pimento cheese melted into a pot of grits - tangy, creamy, a little piquant.
Ingredients
- 1 cup grits
- 4 cups water
- 1 teaspoon salt
- 2 tablespoons butter
- 1 1/2 cups shredded sharp cheddar
- 2 oz cream cheese
- 1 (4 oz) jar diced pimentos, drained
- 2 tablespoons mayonnaise
- 1/4 teaspoon cayenne
- Black pepper
Directions
Cook the grits in the salted water until creamy.
- Off the heat, stir in the butter, cheddar, and cream cheese until smooth.
- Fold in the pimentos, mayonnaise, and cayenne.
- Season with black pepper and serve warm.
Notes
Tastes like Carolina caviar in grits form - excellent under fried chicken.
