The South’s beloved pimento cheese melted into a pot of grits - tangy, creamy, a little piquant.

Ingredients

  • 1 cup grits
  • 4 cups water
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1 1/2 cups shredded sharp cheddar
  • 2 oz cream cheese
  • 1 (4 oz) jar diced pimentos, drained
  • 2 tablespoons mayonnaise
  • 1/4 teaspoon cayenne
  • Black pepper

Directions

Cook the grits in the salted water until creamy.

  1. Off the heat, stir in the butter, cheddar, and cream cheese until smooth.
  2. Fold in the pimentos, mayonnaise, and cayenne.
  3. Season with black pepper and serve warm.

Notes

Tastes like Carolina caviar in grits form - excellent under fried chicken.
