Roasted Garlic Smashed Potatoes

Rustic, chunky smashed potatoes loaded with butter, garlic, and a splash of warm milk for the perfect weeknight side.

Ingredients

  • 3 lbs Yukon Gold potatoes, cut into chunks (skins on)

Salt, to taste

  • 1 whole head garlic, cloves smashed
  • 4 tablespoons butter
  • 3/4 cup warm milk or half-and-half
  • 1/4 cup sour cream

Freshly ground black pepper, to taste

  • 3 tablespoons chopped fresh chives

Directions

  1. Place the potatoes and garlic cloves in a large pot, cover with cold water, and salt generously.
  2. Bring to a boil and cook until the potatoes are fork-tender, 15 to 18 minutes; drain and return to the pot.
  3. Add the butter, warm milk, and sour cream and smash with a masher to a chunky texture.
  4. Season with salt and plenty of black pepper, stir in the chives, and serve warm.
