Roasted Garlic Smashed Potatoes
Rustic, chunky smashed potatoes loaded with butter, garlic, and a splash of warm milk for the perfect weeknight side.
Rustic, chunky smashed potatoes loaded with butter, garlic, and a splash of warm milk for the perfect weeknight side.
Ingredients
- 3 lbs Yukon Gold potatoes, cut into chunks (skins on)
Salt, to taste
- 1 whole head garlic, cloves smashed
- 4 tablespoons butter
- 3/4 cup warm milk or half-and-half
- 1/4 cup sour cream
Freshly ground black pepper, to taste
- 3 tablespoons chopped fresh chives
Directions
- Place the potatoes and garlic cloves in a large pot, cover with cold water, and salt generously.
- Bring to a boil and cook until the potatoes are fork-tender, 15 to 18 minutes; drain and return to the pot.
- Add the butter, warm milk, and sour cream and smash with a masher to a chunky texture.
- Season with salt and plenty of black pepper, stir in the chives, and serve warm.
