Robert Irvine's BBQ Southern Meatloaf

Ingredients

  • 2 pounds ground beef (80/20)
  • 1/2 pound ground pork
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 3/4 cup breadcrumbs
  • 1/4 cup whole milk
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika

Kosher salt and freshly ground black pepper

  • 1 cup barbecue sauce, divided

Directions

  1. Preheat the oven to 375 degrees F and line a sheet pan with parchment.
  2. In a large bowl, gently mix the beef, pork, onion, garlic, eggs, breadcrumbs, milk, Worcestershire, Dijon, paprika, salt, pepper, and 1/4 cup of the barbecue sauce until just combined.
  3. Form into a loaf on the sheet pan and brush the top with half of the remaining barbecue sauce.
  4. Bake 35 minutes, then brush with the rest of the sauce and continue baking until the internal temperature reaches 155 degrees F, about 10 to 15 more minutes.
  5. Rest 10 minutes before slicing and serving.
