Robert Irvine's BBQ Southern Meatloaf

Ingredients
- 2 pounds ground beef (80/20)
- 1/2 pound ground pork
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- 3/4 cup breadcrumbs
- 1/4 cup whole milk
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
- 1 cup barbecue sauce, divided
Directions
- Preheat the oven to 375 degrees F and line a sheet pan with parchment.
- In a large bowl, gently mix the beef, pork, onion, garlic, eggs, breadcrumbs, milk, Worcestershire, Dijon, paprika, salt, pepper, and 1/4 cup of the barbecue sauce until just combined.
- Form into a loaf on the sheet pan and brush the top with half of the remaining barbecue sauce.
- Bake 35 minutes, then brush with the rest of the sauce and continue baking until the internal temperature reaches 155 degrees F, about 10 to 15 more minutes.
- Rest 10 minutes before slicing and serving.
