Sausage and Fried-Egg Breakfast Grits Bowl

A diner-style breakfast in a bowl: creamy cheese grits, crumbled breakfast sausage, a runny fried egg, and scallions.

Ingredients

  • 4 cups hot creamy cheese grits
  • 1 pound bulk breakfast sausage
  • 4 eggs
  • 2 scallions, sliced
  • Hot sauce
  • Butter for frying eggs
  • Salt and pepper

Directions

  1. Brown the sausage in a skillet over medium-high heat, breaking it up, until cooked through. Drain and keep warm.
  2. Fry the eggs in butter to your liking - runny yolks are ideal here.
  3. Divide the hot grits among 4 bowls. Top each with sausage, a fried egg, and scallions.
  4. Finish with hot sauce and a crack of black pepper.

Notes

Swap the sausage for chorizo or smoked andouille to change the accent.
