Sausage and Fried-Egg Breakfast Grits Bowl

A diner-style breakfast in a bowl: creamy cheese grits, crumbled breakfast sausage, a runny fried egg, and scallions.
Ingredients
- 4 cups hot creamy cheese grits
- 1 pound bulk breakfast sausage
- 4 eggs
- 2 scallions, sliced
- Hot sauce
- Butter for frying eggs
- Salt and pepper
Directions
- Brown the sausage in a skillet over medium-high heat, breaking it up, until cooked through. Drain and keep warm.
- Fry the eggs in butter to your liking - runny yolks are ideal here.
- Divide the hot grits among 4 bowls. Top each with sausage, a fried egg, and scallions.
- Finish with hot sauce and a crack of black pepper.
Notes
Swap the sausage for chorizo or smoked andouille to change the accent.
