Browned Italian sausages tucked into crusty rolls with sweet peppers and onions cooked down in tomato and wine.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 8 Italian sausage links (sweet, hot, or a mix)
  • 2 bell peppers (red and green), sliced
  • 1 large onion, sliced
  • 4 cloves garlic, sliced
  • 1/2 cup dry red or white wine
  • 1 cup tomato sauce
  • 1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

  • 4 crusty sub rolls, split

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Brown the sausages on all sides, about 8 minutes; remove to a plate.
  2. Add the peppers, onion, and garlic to the skillet and cook until softened and lightly charred, 6 to 7 minutes.
  3. Add the wine and scrape up the bottom of the pan; simmer 2 minutes.
  4. Stir in the tomato sauce and oregano, season with salt and pepper, return the sausages, and simmer 5 minutes until cooked through.
  5. Pile a sausage and a heap of peppers and onions into each roll and spoon sauce over the top.
