Sausage and Pepper Subs
Browned Italian sausages tucked into crusty rolls with sweet peppers and onions cooked down in tomato and wine.

Browned Italian sausages tucked into crusty rolls with sweet peppers and onions cooked down in tomato and wine.
Ingredients
- 2 tablespoons extra-virgin olive oil
- 8 Italian sausage links (sweet, hot, or a mix)
- 2 bell peppers (red and green), sliced
- 1 large onion, sliced
- 4 cloves garlic, sliced
- 1/2 cup dry red or white wine
- 1 cup tomato sauce
- 1 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
- 4 crusty sub rolls, split
Directions
- Heat the olive oil in a large skillet over medium-high heat. Brown the sausages on all sides, about 8 minutes; remove to a plate.
- Add the peppers, onion, and garlic to the skillet and cook until softened and lightly charred, 6 to 7 minutes.
- Add the wine and scrape up the bottom of the pan; simmer 2 minutes.
- Stir in the tomato sauce and oregano, season with salt and pepper, return the sausages, and simmer 5 minutes until cooked through.
- Pile a sausage and a heap of peppers and onions into each roll and spoon sauce over the top.
