Skillet Sweet Potatoes
Sweet potato slices sauteed in butter and oil until caramelized and tender, seasoned simply.

Ingredients
- 2 pounds sweet potatoes, peeled and cut into 1/2-inch slices
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh chives or parsley
Directions
- Heat the butter and oil in a large skillet over medium-high heat until the butter foams.
- Add the sweet potato slices in a single layer and season with salt and pepper.
- Cook for about 8 minutes per side, turning once, until deeply golden and caramelized.
- Cover and cook a few minutes more if needed until tender in the center.
- Sprinkle with chives or parsley and serve hot.
