Sweet potato slices sauteed in butter and oil until caramelized and tender, seasoned simply.

Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 1/2-inch slices
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh chives or parsley

Directions

  1. Heat the butter and oil in a large skillet over medium-high heat until the butter foams.
  2. Add the sweet potato slices in a single layer and season with salt and pepper.
  3. Cook for about 8 minutes per side, turning once, until deeply golden and caramelized.
  4. Cover and cook a few minutes more if needed until tender in the center.
  5. Sprinkle with chives or parsley and serve hot.
