Creamy grits with the gentle campfire note of smoked Gouda - a restaurant-style bed for blackened fish, shrimp, or braised greens.
Ingredients
- 1 cup stone-ground grits
- 2 cups water
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon salt
- 3 tablespoons butter
- 1 1/2 cups shredded smoked Gouda
- Black pepper
- Dash of hot sauce
Directions
- Bring the water, milk, cream, and salt to a gentle boil.
- Whisk in the grits, lower the heat, cover, and cook 25 to 30 minutes, stirring often, until creamy.
- Off the heat, stir in the butter and smoked Gouda until smooth.
- Season with black pepper and a dash of hot sauce.
Notes
Remove any wax rind before shredding. Pairs especially well with blackened catfish.
