Creamy grits with the gentle campfire note of smoked Gouda - a restaurant-style bed for blackened fish, shrimp, or braised greens.

Ingredients

  • 1 cup stone-ground grits
  • 2 cups water
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 1 1/2 cups shredded smoked Gouda
  • Black pepper
  • Dash of hot sauce

Directions

  1. Bring the water, milk, cream, and salt to a gentle boil.
  2. Whisk in the grits, lower the heat, cover, and cook 25 to 30 minutes, stirring often, until creamy.
  3. Off the heat, stir in the butter and smoked Gouda until smooth.
  4. Season with black pepper and a dash of hot sauce.

Notes

Remove any wax rind before shredding. Pairs especially well with blackened catfish.
