Southern Peach Cobbler

An easy self-crusting peach cobbler where the batter rises up around the sweet fruit as it bakes.
Ingredients
- 4 cups sliced fresh or frozen peaches (or two 15-oz cans, drained)
- 2 cups sugar, divided
- 1/2 cup water
- 1/2 cup (1 stick) butter
- 1 1/2 cups self-rising flour
- 1 1/2 cups whole milk
- 1 teaspoon ground cinnamon (optional)
Directions
- Combine the peaches with 1 cup of the sugar and the water in a saucepan; bring to a simmer and cook about 10 minutes.
- Preheat the oven to 350 degrees F and put the butter in a 9x13-inch baking dish to melt in the oven.
- In a bowl, whisk together the remaining 1 cup sugar, the flour, and the milk to make a batter.
- Pour the batter over the melted butter; do not stir.
- Spoon the peaches and their syrup evenly over the batter; do not stir.
Sprinkle with cinnamon if using.
- Bake for 40 to 45 minutes, until the crust is golden brown and risen. Serve warm with ice cream.
