Ingredients
- 1 tablespoon unsalted butter
- 1 cup steel-cut oats
- 3 cups boiling water
- 1/2 cup whole milk
- 1/2 cup buttermilk
- 2 tablespoons packed light brown sugar
- Pinch of kosher salt
Directions
- Melt the butter in a saucepan over medium heat and add the oats, toasting until they smell nutty, about 2 minutes.
- Carefully pour in the boiling water and reduce the heat to a simmer.
- Cook, stirring occasionally, until the oats are tender and creamy, about 25 to 30 minutes.
- Stir in the whole milk, buttermilk, brown sugar, and salt.
- Simmer 1 to 2 more minutes, then serve hot.
