Creamy, nutty steel-cut oats finished with buttermilk and brown sugar for tang and sweetness.

Ingredients

  • 1 tablespoon unsalted butter
  • 1 cup steel-cut oats
  • 3 cups boiling water
  • 1/2 cup whole milk
  • 1/2 cup buttermilk
  • 2 tablespoons packed light brown sugar
  • Pinch of kosher salt

Directions

  1. Melt the butter in a saucepan over medium heat and add the oats, toasting until they smell nutty, about 2 minutes.
  2. Carefully pour in the boiling water and reduce the heat to a simmer.
  3. Cook, stirring occasionally, until the oats are tender and creamy, about 25 to 30 minutes.
  4. Stir in the whole milk, buttermilk, brown sugar, and salt.
  5. Simmer 1 to 2 more minutes, then serve hot.
