Stewed Apples

Ingredients
- Apples — 35 pounds
- Sugar, granulated — 8 pounds (4 No. 56 dippers)
- Water — 2 gallons (8 No. 56 dippers)
- Orange rind or lemon rind — as needed
Directions
- Wash apples; pare and remove cores. Cut apples into eights.
- Mix sugar and water. Heat to boiling point; boil until sugar is dissolved, stirring constantly.
- Continue boiling 5 minutes. Reduce heat and add grated rind.
- Add apples to sirup; simmer until transparent. If sirup thickens during cooking, add more water.

SCALED TO 8 SERVINGS (the original is ÷12.5): Apples — 2 lb 12¾ oz Sugar, granulated — 10¼ oz Water — 2½ cups Orange rind or lemon rind — to taste
