Ingredients
- 1 Pound frog legs or Duck Meat
- 2 pieces ginger, sliced thin (1/16 inch or so)
- 10 cloves garlic, crushed
- 2 Tbsp taoco
- 3 Tbsp Indonesian sweet soy sauce
- 1 Tsp Indonesian Salty Soy sauce
- 1/2 Tsp ground black pepper
- 1 Tsp sugar
- 1 Tsp salt
- 3 Tbsp oil (I use grape seed oil)
- 1/2 Tsp sesame oil
- 2 Cups Chicken Broth
Directions
- Saute garlic and ginger in the oil in a medium sauce pan over medium heat.
- Add taoco and stir well.
- Add the frog legs, soy sauces, and pepper.
- Cook until the frog legs start to firm up.
- Add the broth, reduce heat, and simmer for about 30 minutes.
- Add sugar and salt.
- Stir well.
- Serve in a bowl with a lemon wedge or over rice.
Notes
As you know, I am a big fan of frog legs… I am also a big fan of Indian Cuisine… So when I found this dish, I just HAD to try it… Awesome!!! This can also be made with duck.
You will notice a couple things about this recipe. First off, there is tauco, which you can find at most Asian markets, you can read more about it here. Next is the use of sweet and salty Indonesian soy sauces. These are very different than the standard Asian soy sauces and to really get the correct flavor you should try to find the actual ingredients. Once again, you can usually find these in the Asian markets.
This recipe can be served as a soup (traditionally) or over rice (the way I like it).
