Michael Symon’s signature Cleveland burger built from a three-cut beef blend and stacked with bacon, cheddar, a fried egg, pickled onions and spicy ketchup on a toasted English muffin.
Ingredients
- 1/2 lb ground beef brisket
- 1/2 lb ground beef cheek (or substitute additional ground sirloin)
- 1/2 lb ground sirloin
Kosher salt and cracked black pepper
- 4 thin slices sharp cheddar cheese
- 4 English Muffins, split and toasted
- 8 slices thick-cut bacon, cooked crisp
- 4 large eggs, fried over-easy
- 1/2 English cucumber, thinly sliced
- 1/2 cup pickled red onions
- 1/2 cup ketchup
- 1 tablespoon Sriracha or hot sauce
- 1 tablespoon vegetable oil
Directions
- Gently combine the three ground beefs without overworking, then form into four loosely packed patties slightly wider than the muffins. Season both sides generously with salt and pepper.
- Stir the ketchup and Sriracha together to make spicy ketchup; set aside.
- Heat the oil in a cast-iron skillet over medium-high heat. Cook the patties about 3 to 4 minutes per side for medium, laying a slice of cheddar on each during the last minute to melt.
- Fry the eggs over-easy in the same pan or a separate skillet.
- Spread spicy ketchup on the toasted muffin bottoms. Top each with a patty, two slices of bacon, a fried egg, cucumber slices and pickled red onions.
- Cap with the muffin tops and serve immediately.
