The Lola Burger

Michael Symon's signature Cleveland burger built from a three-cut beef blend and stacked with bacon, cheddar, a fried egg, pickled onions and spicy ketchup on a toasted English muffin.

The Lola Burger

Michael Symon’s signature Cleveland burger built from a three-cut beef blend and stacked with bacon, cheddar, a fried egg, pickled onions and spicy ketchup on a toasted English muffin.

Ingredients

  • 1/2 lb ground beef brisket
  • 1/2 lb ground beef cheek (or substitute additional ground sirloin)
  • 1/2 lb ground sirloin

Kosher salt and cracked black pepper

  • 4 thin slices sharp cheddar cheese
  • 4 English Muffins, split and toasted
  • 8 slices thick-cut bacon, cooked crisp
  • 4 large eggs, fried over-easy
  • 1/2 English cucumber, thinly sliced
  • 1/2 cup pickled red onions
  • 1/2 cup ketchup
  • 1 tablespoon Sriracha or hot sauce
  • 1 tablespoon vegetable oil

Directions

  1. Gently combine the three ground beefs without overworking, then form into four loosely packed patties slightly wider than the muffins. Season both sides generously with salt and pepper.
  2. Stir the ketchup and Sriracha together to make spicy ketchup; set aside.
  3. Heat the oil in a cast-iron skillet over medium-high heat. Cook the patties about 3 to 4 minutes per side for medium, laying a slice of cheddar on each during the last minute to melt.
  4. Fry the eggs over-easy in the same pan or a separate skillet.
  5. Spread spicy ketchup on the toasted muffin bottoms. Top each with a patty, two slices of bacon, a fried egg, cucumber slices and pickled red onions.
  6. Cap with the muffin tops and serve immediately.
