Turkey Stuffed Acorn Squash

Nature’s perfect bowl. Sweet roasted squash filled with savory turkey.

Ingredients

  • 2 medium acorn squash, halved and seeds removed
  • 1 lb 93% lean ground turkey
  • 1/2 cup diced onion
  • 1/2 cup diced apple
  • 3 cloves garlic, minced
  • 1 tsp sage
  • 1/2 tsp thyme
  • 1/4 cup dried cranberries (no sugar added)
  • 2 oz goat cheese
  • 1 tbsp olive oil
  • Salt and pepper

Directions

  1. Preheat oven to 400°F. Brush squash with olive oil, season with salt and pepper, place cut-side down on a baking sheet.

Roast 35-40 minutes until tender.

  1. Meanwhile, cook turkey in a skillet. Add onion, apple, garlic, sage, and thyme.
  2. Cook 8-10 minutes until turkey is cooked through and apples are soft.

Stir in cranberries. Season with salt and pepper.

  1. Fill roasted squash halves with turkey mixture. Crumble goat cheese over top.
  2. Return to oven 5 minutes.

Notes

Acorn squash is a lower-glycemic choice compared to most starchy vegetables. The sweetness pairs beautifully with savory turkey.
