Two Minute Chocolate Chip Cookie for One

Ingredients

  • 2 Tbsp Unsalted Butter (softened)
  • 1 1/2 Tbsp White Sugar
  • 1 1/2 Tbsp Brown Sugar
  • 2 Tbsp Beaten Egg (about 1/2 large egg)
  • 1/4 Tsp Vanilla Extract
  • 5 Tbsp All Purpose Flour
  • 1/4 Tsp Baking Soda

Pinch of Salt

  • 1/4 Cup Chocolate Chips

Directions

  1. Place the butter and sugars in a 2-cup bowl or ramekin. Use a fork to combine.
  2. Beat an egg and add two tablespoons of the egg mixture into the bowl. Add the vanilla, stir to combine.
  3. Add the flour, baking soda and salt. Give it another good stir.

Finally, stir in the chocolate chips.

  1. Save a few for the top, if you would like. I do!!!
  2. Now put the mixture into the microwave and let it bake for about 2 minutes on high. This may take a bit of experimentation to get just right. I like to use 70% power and let it go about 2 1/2 minutes.
  3. Now go enjoy your personal cookie and a good book :-)

OK, so you are sitting at home by yourself. It’s cold and raining outside. You have a great book to read in your comfy reading chair but one thing is missing. What could it be? A glass of wine? Well, sometimes that hits the spot but tonight how about a big chocolate chip cookie topped with a scoop of vanilla ice cream. YES!!!
