Fall-off-the-bone oven-braised baby back ribs with a sweet-spicy dry rub and a tangy braising liquid.
Ingredients
- 2 whole slabs pork baby back ribs
- 8 tablespoons packed light brown sugar
- 3 tablespoons kosher salt
- 1 tablespoon chili powder
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
- 1/2 teaspoon Old Bay seasoning
- 1 cup white wine
- 2 tablespoons white wine vinegar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon honey
- 2 cloves garlic, minced
Directions
Heat the oven to 250 degrees F.
- Combine the brown sugar, salt, chili powder, black pepper, cayenne, thyme, onion powder, and Old Bay to make the dry rub.
Rub the mixture all over both slabs of ribs.
- Lay each slab on a large sheet of heavy-duty foil, meat-side down, and crimp into sealed packets, leaving one end open.
- Whisk together the white wine, vinegar, Worcestershire, honey, and garlic for the braising liquid.
- Pour half the braising liquid into each foil packet, then seal completely.
- Place the packets on sheet pans and bake for 2 1/2 hours until very tender.
- Carefully open the packets, pour the juices into a saucepan, and reduce to a glaze.
- Brush the ribs with the glaze and broil or grill briefly to caramelize before serving.
