You Won't Be Single For Long Vodka Cream Pasta

A silky penne alla vodka with a creamy tomato sauce so good Rachael says it has inspired marriage proposals.
Ingredients
- 1 lb penne rigate
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 2 large shallots, finely chopped
- 1 cup vodka
- 1 cup chicken stock
- 1 (28 oz) can crushed tomatoes
- 1/2 cup heavy cream
Salt and freshly ground black pepper, to taste
- 20 leaves fresh basil, torn
- 1/2 cup grated Parmigiano-Reggiano, plus more for serving
Directions
- Bring a large pot of salted water to a boil and cook the penne to al dente; reserve 1/2 cup pasta water, then drain.
- Meanwhile, heat the olive oil and butter in a large deep skillet over medium heat. Add the garlic and shallots and cook gently until softened, 3 to 5 minutes.
- Add the vodka and simmer until reduced by half, 2 to 3 minutes.
- Stir in the chicken stock and crushed tomatoes; bring to a bubble and simmer 5 minutes.
- Reduce heat to low and stir in the heavy cream. Season with salt and pepper and warm through, about 1 minute.
- Toss the drained pasta with the sauce, adding a splash of pasta water if needed. Stir in the basil and Parmigiano.
- Serve in shallow bowls topped with more cheese and a little extra basil.
