You Won't Be Single For Long Vodka Cream Pasta

A silky penne alla vodka with a creamy tomato sauce so good Rachael says it has inspired marriage proposals.

Ingredients

  • 1 lb penne rigate
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 2 large shallots, finely chopped
  • 1 cup vodka
  • 1 cup chicken stock
  • 1 (28 oz) can crushed tomatoes
  • 1/2 cup heavy cream

Salt and freshly ground black pepper, to taste

  • 20 leaves fresh basil, torn
  • 1/2 cup grated Parmigiano-Reggiano, plus more for serving

Directions

  1. Bring a large pot of salted water to a boil and cook the penne to al dente; reserve 1/2 cup pasta water, then drain.
  2. Meanwhile, heat the olive oil and butter in a large deep skillet over medium heat. Add the garlic and shallots and cook gently until softened, 3 to 5 minutes.
  3. Add the vodka and simmer until reduced by half, 2 to 3 minutes.
  4. Stir in the chicken stock and crushed tomatoes; bring to a bubble and simmer 5 minutes.
  5. Reduce heat to low and stir in the heavy cream. Season with salt and pepper and warm through, about 1 minute.
  6. Toss the drained pasta with the sauce, adding a splash of pasta water if needed. Stir in the basil and Parmigiano.
  7. Serve in shallow bowls topped with more cheese and a little extra basil.
