The Cure
The moment you add nitrite, you are making a different kind of sausage — with a different color, a different flavor, a different shelf life, and a different safety story. This page is about what actually happens in those hours, and about the one methodological choice that separates a repeatable cure from a hopeful one.
What the curing salts are — Cure #1 versus #2 versus Tender Quick versus celery powder, and the 156 ppm arithmetic — is on curing salts. Don’t make anything cured until you’ve read that page. This one assumes it.
What nitrite actually does
Four things, and only one of them is the reason it’s mandatory.
1. It suppresses Clostridium botulinum. This is the job. Everything else is a side effect. See food safety.
2. It fixes the color. Nitrite reduces to nitric oxide, which binds myoglobin to form nitrosylmyoglobin — the stable pink of ham, bacon, hot dogs and salami. Heat it and it sets to the cooked-cured pink that doesn’t fade. This is why the pink-juice doneness test is meaningless on a cured sausage: it will be pink at 130°F and pink at 180°F. Take its temperature instead.
3. It creates the cured flavor. That specific tang that says “ham” rather than “roast pork” is a nitrite reaction, not a spice. You cannot get it any other way, which is why “uncured” products taste cured — because they are, via celery powder.
4. It’s an antioxidant. Cured meat doesn’t go rancid nearly as fast, because nitrite interferes with fat oxidation. A real practical benefit in anything that hangs for weeks.
The Germans have a word for the color-and-flavor transformation — Umrötung, “reddening” — and their food code uses umgerötet as a defining characteristic of a proper Rohwurst. It’s a better word than anything English has, because it names the whole change rather than just the hue.
Equilibrium curing versus the overnight kind
This is the methodological fork, and it’s the most useful idea on the page.
The old way: a heavy cure, timed
The traditional method — and what most old recipes describe — is to apply more salt and cure than the meat should end up with, then remove the meat after a set time before it gets too salty. A bacon cure might be a thick coating rubbed on and rinsed off after seven days.
The problem is obvious once you see it: the outcome depends on the timing, and the timing depends on the thickness of the cut, the temperature, the humidity, and how heavily you applied it. Leave it a day too long and it’s inedibly salty. Take it off a day early and it’s under-cured in the middle. Every batch is a slightly different experiment.
Equilibrium curing: the number you want, and time
Equilibrium curing (EQ) applies exactly the percentage of salt and cure you want in the finished product, and then leaves it until it’s evenly distributed.
You weigh the meat. You calculate 2.5% salt and 0.25% cure of that weight. You apply all of it, seal it, and wait. Because there’s no excess, it cannot over-cure. Leave it an extra three days and nothing bad happens — the salt just continues to even out. The endpoint is a state, not a moment.
For a whole muscle, roughly a day per half-inch of thickness plus a few days’ margin. For a sausage, where you’ve ground the meat and mixed the cure through it, distribution is already done at the mixer — the “cure time” is really just a rest for the reaction to proceed, typically overnight to 48 hours.
I use EQ for everything now. It turns curing from a skill into arithmetic, and arithmetic is repeatable.
Two things it needs: a scale that reads to 0.01 g for the cure — at 0.25% of a 2 kg block you’re weighing 5.0 g of a mildly toxic additive — and the discipline to weigh the trimmed meat block, not what was on the receipt. Both are on scaling and recordkeeping.
Curing a sausage versus curing a muscle
Worth separating, because they behave differently.
In a sausage, the cure goes into the mix and gets distributed mechanically. There is no diffusion problem — you did the distributing. What you’re waiting for is the chemistry. Add cure early, dissolved in the formula’s liquid, and mix it thoroughly; adding it late as an afterthought gives you pockets, and uneven cure in a fermented or dried sausage is a genuine safety problem rather than a cosmetic one.
In a whole muscle — bacon, coppa, a ham — the cure has to physically migrate inward, and that’s what the day-per-half-inch is about.
Diffusion is slow, and it’s the same physics that makes a marinated egg gradient. Salt moves through a gel at millimeters per day, not inches. That’s why a thick piece needs weeks and why “it’s been in the brine overnight, it must be cured through” is wrong for anything substantial.
Dry cure, wet cure, injection
Dry cure — salt and cure rubbed on or mixed in, no added water. What every sausage uses, and what I use for bacon. Concentrates flavor because the meat loses water rather than gaining it.
Wet cure / brine — the cure dissolved in water and the meat submerged. Faster distribution in a thick piece and a juicier result; the trade is dilution of flavor and a softer texture. ⚠ The trap: you cannot compute ingoing ppm from a published brine recipe unless it tells you how much brine the meat actually absorbs, which most don’t. This is why I distrust old brine recipes and default to EQ dry cure — with EQ the ppm is simply the percentage you weighed out.
Injection — brine pumped into the interior with a needle. It’s how commercial ham cures in hours instead of weeks. Legitimate, and genuinely useful on a thick piece, but it’s a volume-and-pumping-percentage calculation and it’s easy to get wrong at home.
Where the cure meets the rest of the process
The cure doesn’t work alone — it’s one hurdle in a stack, and which cure you use is decided by what happens next:
- Going to be cooked or hot-smoked? → Cure #1. The nitrite does its work through the cure and the cook and is then largely spent.
- Going to hang raw for weeks? → Cure #2. The nitrate reservoir slow-releases fresh nitrite across the whole dry, when there’s no cook to fall back on.
The process decides, never the caliber. I used to write that thin casings should use Cure #1 regardless — that was wrong, and it’s corrected on the Landjäger craft page. A thin raw stick still hangs three weeks, which is well past nitrite’s useful life on its own.
What a cured sausage looks like when it’s worked
- Color has turned from gray-pink raw mince to a distinct, even rose-red throughout — umgerötet.
- Texture is firmer and tackier; the salt has pulled protein and the block holds together noticeably better than it did.
- Smell has that faint cured tang.
If the interior is still gray after a proper rest, the cure was under-dosed, unevenly mixed, or you’re looking at a genuinely fresh sausage. Gray streaks through an otherwise pink block mean uneven distribution — a mixing failure, and on anything that’s going to hang, a reason to be cautious rather than philosophical.
