Cod gets a crispy Parmesan-herb topping that makes it feel indulgent while remaining extremely lean.
Ingredients
- 4 cod fillets (6 oz each)
- 1/2 cup grated Parmesan
- 2 tbsp chopped fresh parsley
- 1 tbsp fresh thyme leaves
- 2 cloves garlic, minced
Zest of 1 lemon
- 2 tbsp olive oil
- Salt and pepper
- Lemon wedges to serve
Directions
- Preheat oven to 400°F. Line a baking sheet with parchment.
- Pat cod completely dry. Season with salt and pepper.
- Mix Parmesan, parsley, thyme, garlic, lemon zest, and olive oil into a paste.
Press herb crust firmly onto top of each fillet.
- Bake 12-15 minutes until fish flakes easily and crust is golden.
- Serve immediately with lemon wedges.
Notes
Cod is one of the leanest, highest-protein fish available. The cheese crust provides a satisfying texture that makes this feel much richer than it is.
