Baked Herb Chicken Thighs

Juicy, crispy-skinned chicken thighs seasoned with Mediterranean herbs. The most forgiving chicken recipe in existence.

Ingredients

  • 8 bone-in skin-on chicken thighs
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp each: dried thyme, rosemary, oregano
  • 1 tsp smoked paprika

Salt and pepper

  • 1 lemon
  • Fresh thyme to garnish

Directions

  1. Preheat oven to 425°F. Pat chicken completely dry — this is the key to crispy skin.
  2. Mix olive oil, garlic, and all dried herbs and spices into a paste.
  3. Rub paste under and over skin of each thigh. Season generously with salt and pepper.
  4. Place skin-side up in a cast iron skillet or baking dish.
  5. Squeeze half the lemon over chicken. Roast 28-32 minutes until skin is golden and crisp, internal temp 165°F.
  6. Rest 5 minutes. Squeeze remaining lemon over before serving.

Notes

Bone-in, skin-on thighs are significantly more forgiving than breasts — nearly impossible to overcook. Remove skin before eating to reduce saturated fat significantly.
