Baked Mediterranean Salmon

Salmon roasted with olives, capers, and tomatoes in the Mediterranean tradition. Impressive for how little effort it takes.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup cherry tomatoes, halved
  • 1/3 cup Kalamata olives, halved
  • 2 tbsp capers, drained
  • 4 cloves garlic, thinly sliced
  • 3 tbsp olive oil
  • 1 lemon, sliced into rounds
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper
  • Fresh parsley to finish

Directions

  1. Preheat oven to 400°F. Line a baking sheet with parchment.
  2. Arrange tomatoes, olives, capers, and garlic on the pan. Drizzle with 2 tbsp olive oil, toss.
  3. Nestle salmon fillets on top of the vegetables. Drizzle with remaining oil.
  4. Season salmon with oregano, red pepper flakes, salt, and pepper. Top with lemon slices.
  5. Bake 12-15 minutes until salmon flakes easily. Do not overcook.
  6. Garnish with fresh parsley and serve directly from the pan.

Notes

The vegetables create a sauce as they roast. Wild salmon is preferable for omega-3 content.
