Ingredients
- 1 ripe banana, mashed
- 2 large eggs
- 1 scoop vanilla protein powder
- 2 tbsp old-fashioned oats (blended to flour)
- 1 tsp baking powder
- ½ tsp cinnamon
Cooking spray
- Topping: ½ cup mixed berries, 1 tbsp Greek yogurt (as syrup sub)
Directions
Blend or mash banana until smooth.
- Whisk in eggs, protein powder, oat flour, baking powder, and cinnamon.
- Batter should be pourable — add 1 tbsp almond milk if too thick.
Heat pan to medium. Spray with cooking spray.
- Pour small pancakes (¼ cup each) into pan. Cook 2–3 minutes until bubbles form.
- Flip and cook 2 minutes more. Makes about 4–5 small pancakes.
- Top with mixed berries and a dollop of Greek yogurt instead of syrup.
Notes
A ripe (brown-spotted) banana makes these naturally sweeter and binds the batter better. Use the blender-method for the smoothest batter — blend banana, eggs, protein, oat flour, baking powder, and cinnamon all together.
