Beef Lettuce Tacos (3 Tacos)

All the flavors of Taco Tuesday, minus the refined flour or corn tortilla carbs.

Ingredients

  • 6 oz 90%+ lean ground beef
  • 6 large lettuce leaves (Bibb or romaine)
  • ½ avocado, sliced

½ cup salsa (fresh pico de gallo preferred)

  • 2 tbsp plain Greek yogurt (sour cream sub)
  • ¼ cup shredded cheddar

Lime wedge

  • Taco spices: 1 tsp chili powder, ½ tsp cumin, ½ tsp garlic powder, ¼ tsp onion powder, salt

Directions

  1. Brown ground beef over medium heat, breaking apart.
  2. Add all taco spices and ¼ cup water. Stir and simmer 3–4 minutes until water evaporates.
  3. Lay 2 lettuce leaves on top of each other per taco (for sturdiness).

Fill each taco with seasoned beef.

  1. Top with salsa, avocado, cheese, and a dollop of Greek yogurt.
  2. Finish with fresh lime juice.

Notes

Using two lettuce leaves per taco stacked together significantly reduces tearing. Bibb lettuce (also called butter lettuce) forms the best cups — the leaves are wide and pliable.
