Ingredients
- 1 medium head cabbage, roughly chopped
- 3 carrots, sliced
- 3 stalks celery, sliced
- 1 large onion, diced
- 1 can (28 oz) diced tomatoes
- 6 cups vegetable broth
- 1 cup green beans
- 1/2 cup green pepper, diced
- 3 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp thyme
- 2 tbsp olive oil
- Salt and pepper
- Fresh parsley
Directions
- Heat olive oil in a large pot. Sauté onion, carrots, and celery 5 minutes.
Add garlic, cumin, and thyme. Cook 1 minute.
- Add cabbage, green beans, pepper, diced tomatoes, and broth.
- Bring to a boil then simmer covered 20-25 minutes until vegetables are tender.
- Season generously with salt and pepper. Top with fresh parsley.
Notes
Eat as a snack or light meal. The extremely low calorie density means you can eat a large bowl for very few calories. Add cooked chicken for protein.
