Cauliflower Mashed 'Potatoes'

Creamy, buttery, and indistinguishable from mashed potatoes when done right. About 80% fewer carbs.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 cloves garlic, peeled
  • 2 tbsp butter
  • 3 oz cream cheese or Greek yogurt
  • 1/4 cup Parmesan cheese, grated
  • Salt and white pepper
  • Fresh chives for garnish
  • Optional: 1/4 tsp garlic powder, pinch of nutmeg

Directions

  1. Steam or boil cauliflower with garlic cloves until very tender, 10-12 minutes.
  2. Drain thoroughly and pat dry — excess moisture ruins the texture.
  3. Process in a food processor with butter, cream cheese, and Parmesan until very smooth.
  4. Season with salt, white pepper, and optional garlic powder and nutmeg.
  5. Transfer to a serving bowl. Garnish with chives and a pat of butter.

Notes

The most important step is removing moisture. After draining, return to the hot pot over low heat for 1-2 minutes to steam off remaining water.
