Chicken and Broccoli Soup

A creamy but light soup that’s actually made without cream. Incredibly satisfying.

Ingredients

  • 1.5 lbs boneless skinless chicken breast, diced
  • 4 cups broccoli florets
  • 6 cups low-sodium chicken broth
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 cup plain Greek yogurt (for creaminess)
  • Salt and pepper
  • Optional: 1/2 cup shredded cheddar for topping

Directions

  1. Heat olive oil in a large pot over medium heat. Cook onion 4-5 minutes.

Add garlic and thyme, cook 1 minute.

  1. Add chicken pieces and cook 5-6 minutes until nearly cooked through.
  2. Add broth and broccoli. Bring to a boil then simmer 10-12 minutes.
  3. Remove pot from heat. Let cool 5 minutes then stir in Greek yogurt.
  4. Use a potato masher to lightly crush some of the vegetables for a thicker texture.
  5. Season with salt and pepper.

Notes

Adding Greek yogurt off the heat prevents curdling. It gives a silky, creamy texture with significant protein.
