The flavors of street shawarma achieved in your oven. Perfect for meal prep.
Ingredients
- 2 lbs boneless chicken thighs
- Marinade: 1/4 cup olive oil, 3 tbsp lemon juice, 4 cloves garlic minced, 1 tbsp cumin, 1 tsp turmeric, 1 tsp coriander, 1/2 tsp cinnamon, 1/2 tsp allspice, 1/4 tsp cardamom, salt and pepper
- Serve with: pita or rice, tomatoes, cucumber, red onion, parsley
- Garlic sauce: 1 cup Greek yogurt, 2 cloves garlic, 1 tbsp lemon, salt
Directions
- Marinate chicken at least 2 hours (overnight is better).
- Preheat oven to 425°F. Place chicken on a rack over a baking sheet.
- Roast 25-30 minutes until cooked and slightly charred.
- Rest 5 minutes, then slice thin against the grain.
- Serve in pita or over rice with garlic sauce and vegetables.
Notes
Slicing thin while slightly warm mimics the shaved shawarma texture. For extra authenticity, briefly sear sliced chicken in a very hot dry pan before serving.
