Creamy Vegan Grits with BBQ Jackfruit

Ingredients

  • 1 cup grits
  • 2 cups water
  • 1 (13.5 oz) can coconut milk
  • 1/4 cup nutritional yeast
  • 1 teaspoon salt
  • 2 tablespoons vegan butter
  • For the jackfruit: 2 cans young green jackfruit, drained and shredded; 1 cup BBQ sauce; 1 teaspoon smoked paprika

Directions

  1. Saute the shredded jackfruit with the smoked paprika until it begins to brown, then stir in the BBQ sauce and simmer until saucy and ‘pulled.’
  2. Bring the water and coconut milk to a simmer with the salt, whisk in the grits, and cook until creamy. Stir in the nutritional yeast and vegan butter.
  3. Top bowls of grits with the BBQ jackfruit.
