Dairy-free grits cooked in coconut milk with nutritional yeast, topped with smoky pulled BBQ jackfruit.
Ingredients
- 1 cup grits
- 2 cups water
- 1 (13.5 oz) can coconut milk
- 1/4 cup nutritional yeast
- 1 teaspoon salt
- 2 tablespoons vegan butter
- For the jackfruit: 2 cans young green jackfruit, drained and shredded; 1 cup BBQ sauce; 1 teaspoon smoked paprika
Directions
- Saute the shredded jackfruit with the smoked paprika until it begins to brown, then stir in the BBQ sauce and simmer until saucy and ‘pulled.’
- Bring the water and coconut milk to a simmer with the salt, whisk in the grits, and cook until creamy. Stir in the nutritional yeast and vegan butter.
- Top bowls of grits with the BBQ jackfruit.
