Cucumber Avocado Salad

Cooling, creamy, and refreshing. An ideal side for grilled proteins.
Ingredients
- 2 English cucumbers, sliced or diced
- 2 ripe avocados, cubed
- 1/2 red onion, very thinly sliced
- 1/4 cup fresh cilantro or dill
- Dressing: 3 tbsp olive oil, 2 tbsp lime or lemon juice, 1 clove garlic minced, salt, pepper, pinch of cayenne
Directions
Combine cucumber and red onion in a bowl.
- Whisk dressing and pour over cucumber. Toss and let sit 5 minutes.
- Add avocado cubes and herb. Toss gently to avoid mashing avocado.
- Season with additional salt and pepper if needed. Serve immediately.
Notes
Add immediately before serving — avocado browns within an hour. Can prep cucumber and dressing ahead.
