Garlic-Mustard Vinaigrette

Pepin’s everyday Dijon-and-garlic vinaigrette that dresses any green salad.
Ingredients
- 1 tablespoon Dijon mustard
- 1 garlic clove, finely chopped
- 3 tablespoons red wine vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup extra-virgin olive oil (or part canola)
- 1 teaspoon chopped fresh herbs (optional)
Directions
- In a bowl, whisk together the Dijon mustard, garlic, vinegar, salt, and pepper until combined.
- Whisking constantly, drizzle in the olive oil in a thin stream until the dressing is emulsified and creamy.
- Whisk in fresh herbs if using. Taste and adjust seasoning.
- Toss with greens just before serving; store leftovers in a jar in the refrigerator and shake before using.
