Pepin’s everyday Dijon-and-garlic vinaigrette that dresses any green salad.

Ingredients

  • 1 tablespoon Dijon mustard
  • 1 garlic clove, finely chopped
  • 3 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup extra-virgin olive oil (or part canola)
  • 1 teaspoon chopped fresh herbs (optional)

Directions

  1. In a bowl, whisk together the Dijon mustard, garlic, vinegar, salt, and pepper until combined.
  2. Whisking constantly, drizzle in the olive oil in a thin stream until the dressing is emulsified and creamy.
  3. Whisk in fresh herbs if using. Taste and adjust seasoning.
  4. Toss with greens just before serving; store leftovers in a jar in the refrigerator and shake before using.
