Goulash – Low Calorie

Ingredients
- 1 pound lean ground turkey
- 1 bag shirataki elbow macaroni noodles
- 1 quart stewed tomatoes
- 2 teaspoons paprika (I use smoked paprika)
- 1 tsp cumin
- 1/2 to 1 tsp ground chipotle chile powder
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1/2 can pumpkin (not the pie filling)
- 1/3 cup egg beaters original
- Vegaline Garlic Mist Spray
Directions
Preheat oven to 425.
- Heat a non-stick pan and spray with the Garlic Mist.
- Cook the onions and garlic until the onion starts to get translucent.
- Add turkey, season with salt and pepper, and cook until brown.
- Remove from heat, drain, put into a bowl, and set aside.
- Rinse and separate the macaroni.
Drain as much water as possible.
- Put the macaroni in a microwave safe bowl and microwave it for 1 minute.
- Drain again thoroughly (it’s amazing how much water you can get out of these things).
- Add the noodles and rest of the ingredients to the macaroni.
- Spray a casserole dish with the Garlic Spray.
- Spoon mixture into the casserole dish.
- Bake in the oven for 25 to 30 minutes.
