The most popular Japanese home-cooked pork dish. Ready in 15 minutes.

Ingredients

  • 1.5 lbs pork loin, sliced thin
  • Marinade: 3 tbsp soy sauce, 2 tbsp mirin, 1 tbsp sake, 2 tbsp grated ginger (this is a lot — it’s the point)
  • 1 tbsp vegetable oil
  • Shredded cabbage, rice, and miso soup to serve

Directions

  1. Mix marinade ingredients together.
  2. Marinate pork slices 15-30 minutes.

Heat oil in a skillet over medium-high heat.

  1. Cook pork in batches without crowding, 2-3 minutes per side, until caramelized and cooked through.

The ginger in the sauce should brown slightly.

  1. Serve over white rice with a mound of shredded cabbage.

Notes

The key is a large amount of fresh ginger. The warmth and bite of ginger is the defining flavor of this dish. Don’t substitute ginger powder.
