Korean BBQ’s most famous rib cut — thin, bone-in short ribs marinated overnight and grilled.

Ingredients

  • 3 lbs flanken-cut beef short ribs (cross-cut, 1/4 inch thick)
  • Marinade: 1/2 cup soy sauce, 1/2 cup pear or apple juice (or grated pear), 1/4 cup brown sugar, 3 tbsp sesame oil, 6 cloves garlic minced, 1 tbsp grated ginger, 3 green onions sliced, black pepper
  • Sesame seeds and green onion to garnish

Directions

  1. Score the meat between bones slightly for better marinade penetration.

Combine all marinade ingredients. Pour over ribs.

  1. Marinate at least 4 hours, preferably overnight in the refrigerator.
  2. Grill over very high heat 3-4 minutes per side until slightly charred.
  3. The sugar in the marinade creates beautiful caramelization on the grill.
  4. Rest 3 minutes. Serve immediately with rice and banchan.

Notes

The grated pear or apple juice is Korean BBQ’s tenderizing secret — the enzymes break down the meat fibers. Do not substitute with plain sugar. Flanken cut must be very thin.
